april recipe ...... chicken baked with plums, ginger and soy sauce
Introduction:
This is one of those recipies you can make and cook the day before, and just pop into the oven for 30 mins before you want to eat. Serve with rice, noodles or mashed potato. The list of ingredients looks long, but it takes minutes to make!!
Ingredients: (Serves 8)
- 8 chicken breasts(can be made with skinned thighs)
- Dollop of oil to brown chicken
- 1 large onion peeled and chopped
- 1 oz butter
- Mix together;
- 2 tablespoons lemon juice
- 1 tablespoon soy sauce
- 1 teaspoon powdered ginger
- 1 tablespoon tomato puree
- 2 tablespoon brown sugar
- 1 teaspoon salt
- 12 0zs good quality plum jam (available to buy at the market)
- 1 teaspoon mustard powder
- 1 clove garlic mashed
- Dash of Worcestershire sauce
Method:
- Season chicken and brown in oil, set aside.
- Sauté onion in butter for 8 minutes gently till soft.
- Add the mixed ingredients and simmer for 15 minutes.
- Arrange the chicken pieces in oven proof dish and pour sauce over.
- Bake in pre heated oven for 40 mins. (180 deg. C / Gas Mark 4)
- You can add chopped quartered fresh plums just before it goes into the oven if you feel like it !
