Ingredients: (Serves 4)
- 5 medium potatoes
- 125g Coolattin Cheddar
- 2 medium onions
- 6 free range eggs
- 4 tablespoons chopped herbs of choice
- Black pepper
- 4 tablespoons of oil
Method:
- Bring pot of water to rolling boil
- Peel and slice potatoes
- Steam potatoes for approx ten minutes
- Test with knife to check potatoes are cooked through
- Drain potatoes thoroughly
- Slice onions thinly
- Heat oil in pan on medium heat
- Sauté onions until soft and translucent
- Add potatoes to onions and cook for approx 5 minutes
- Season with pinch of pepper
- Whisk eggs and chop herbs finely
- Grate cheese and add to egg mix
- Pour egg and cheese over potato and onion
- Cook over low heat until eggs are golden brown on base
- Place pan under hot grill and cook until frittata has turned golden on top
- Cut into wedges and serve with a simple green salad and some lovely bread from the market
