september recipe ...... Apple and Lavender deep filled pie

Get your locally grown cooking and eating apples and lavender sugar at Slaney Country Market…….

Ingredients:   
For the cake:

- 12oz plain flour
- 1oz icing sugar
- 6oz butter
- 1 beaten egg

For the filling:

- 3 cooking apples
- 5 eating apples
- 5 small sprigs of lavender
- Caster sugar

 

Method:
- Rub bitter into sift flour and icing sugar, add beaten egg and cold water to bind.

- Line greased deep pie dish with pastry and roll out pastry lid.

- Slice apples (leave peel on) and fill lined pastry dish with apples and lavender and sugar.

- Cover with pastry lid, brush with beaten egg and sprinkle with lavender sugar.

- Bake in a moderate oven for 45 minutes.

- Serve with custard flavoured with lavender sugar.

- Enjoy
